One man learning to jam, with a little help from his friends
It was the Summer of 2020 and, in a moment of curiosity, I wandered into a store in the historic centre of Saint-Émilion in France. A bearded young man, named Janick Paytra, was standing behind a wood-panelled counter and all around him were award-winning jars of jam that he had made. I listened to him recount his story, how he had been inspired by his father-in-law Patrick Fouquet, Master Jam Maker and 2018 World Champion. I walked out of the store, 15 minutes later, with a large stock of jam and an idea.
What if I learned to make jam, with a little help from my friends?
What if I learned the craft of combining sugar and fruits with heat and forging them into something new?
And what if I started a conversation with people around me in an effort to uncover tales of jam that have been passed down in families across the world from generation to generation? Who knows where the story of this project will end, but for now at least, each pot that I produce has its own story, its own secrets, and its own unique number.
